End of school

So I am sitting in my room and thinking about how crazy it is to be done with school in roughly 2.5 weeks. I can remember when I first started and how eager I was to finish. In realization, I want to leave, but I want to stay as well because I have not been able to just pick all the chefs brains, but of my friends as well. Wines Class

So I forgot to mention last night that I had to take one of the hardest classes in the entire program. This is a three week course that surveys wines from the United States/Canada, South America, Italy, Spain, Portugal, France and Australia. Everything was crammed into the three weeks and I have never studied nor had interest in studying. After finishing the class i Feel that i have a small knowledge about wines, but gained the thirst of wanting to learn more!

Almost Done with School

Here we go,

It has been months since my last post and a lot has happened. I finished my extern in New Orleans and am back at the CIA. New Orleans was so amazing that I am planning on moving back in October. I am currently 8 weeks away from graduation and can't believe it! I remember applying roughly two years ago and can't believe how fast it went.

First Step into a kitchen

So after the grueling 6 weeks of classes, it was time to strap on the chef whites, makes sure the knives are sharpen and go into a kitchen. It is not your average kitchen though, there is not one grill,stove, or oven. It is the meat and fish identification class.

For seven days I was in the meat kitchen. The chef was Johann Sebald and started to butcher when he was 9 years old in germany. He is probably the best butcher that is still alive in the world. We learned how to identify different cuts… Continue

1st 6 weeks of a culinary school

So when you enroll in the culinary school the first thing you want to do is cook. During orientation, you get fitted for your whits and on the last day you get your knife kit.So now you are in your dorm room playing with all of the new knives and you just want to cut something, but no. For the first six weeks you have to be a real student and sit through five classes, which to everyone, is unbearable because you are here for cooking and thats what you want to do.
