I have had some very "Gourmet" Texican experiences in the last 40 years.The best steak I ever had was in a little tiny place near Brownsville cooked over an open flame.It was a Spanish speaking place exclusively. I was contracting with KMart at the time and the store manager took me there for dinner. His name was Jose and was from Mexico City. This steak was marinated for 24 hours prior to cooking according to him.
Some of my friends and family in California have introduced me to some incredible meals in little tiny hole in the wall "joints".
Just have fun with food is my motto
