Dancing Spoon

A friend who owned her own Chinese restaurant for years introduced me to bean threads last summer. They're easy to prepare and are a great source of protein. My friend buys them for me when she goes into Chinatown in downtown Boston, but you can find them in the Asian foods section of the regular grocery store.

I usually serve them with seafood -- pan-seared scallops or haddock with calamata olives, capers & tomatoes. Anybody have any other recipes using bean threads?

I used them in a sweet noodle pudding with apples and raisins. They worked very well.
