It's apple season. I've already gone apple picking and baked a pie. I love apple pie--especially my own--and would love to see other people's recipes for their favorite kind of apple pie.

Mine is very straightforward:

- Basic Pie Dough from the Joy of Cooking--the secret to great pie crust, IMHO, is to handle the dough as little as possible
- A big pile of peeled, sliced apples (Macs are always great), dredged with a little flour
- A tablespoon (at most) of sugar
- A good sprinkling of cinnamon
- A handful of chopped walnuts
- A little lemon juice

Bake at 450 degrees for 10 minutes, then turn the heat down to 350 degrees and bake for 35 more or until the crust is nicely browned. Great hot or cold. Makes an excellent breakfast treat.

It's been a long time since you posted this but it's new to me so I'll respond. My favorite apple pie recipe has more to do with the crust than the insides. I like Gala apples combined with Granny Smiths. For a crust I use RLB's Cheddar Pie crust. I started using it years ago and had extra crust so I made "cookies" with the scraps using gingerbread people cooky cutters, brush with egg wash, sprinkle with turbinado sugar and bake. Now every T-Giving I have to make a batch of the dough whether or not I make an apple pie because my daughter loves the cookies.

I do more crisps than pies. They whip together faster and you're not "committed" to a slice as defined by the cutter, but instead can "spoon" as much as you like on your plate.

I used to make a lot of apple dumplings using that cheddar crust...MMMmm.
